I suggest baking it and just putting the ring inside the muffin afterwords. Baking the engagement ring doesn't sound like a very intelligent way to go...
And make sure the girlfriend doesn't eat the ring.

I think he would do better to bake the bran muffin then cut a little slit in the side of it and slide the ring into the slit. If you baked it in the dough it would be awfully hard to get the baked on goo off of the ring.

NoNoNo... I mean I really do not know if you can bake it in there and nothing will be wrong with it. But everyone bakes the muffin first then put the ring in it and then put icing on it to cover the hole. Make sure he puts it in the middle of the muffin. Alot of female brokes the muffin in half before they eat it.
Good Luck!!!!!!!!!

I suggest he put it somewhere else. Otherwise he may surprise her with a chipped tooth.
How about putting it on top of the muffin, once it is cooked. Maybe he can put a little icing on top with the ring in the center.
If he insists on putting it inside, then wait til the muffins are halfway cooked then poke it down from the top and smooth the top a little to hide the insertion spot.

I would not think it would be a good idea to actually bake the ring. Maybe he could just push the ring inside from the bottom so the tear doesn't show so bad. Does she eat cupcakes? He could put it inside a cupcake and put icing on top so the tear doesn't show.
