A lemon cake I just made didn't rise very much, so I checked the baking soda package after the fact and discovered it had expired 3 months ago. Is it safe to eat the cake?

Yes, but in addition to the cake not rising much, the texture might be a little heavy and dense. Expired baking soda is not spoiled, it just doesn't work anymore.

To the best of my knowledge, baking soda doesn't spoil, but it can lose its effectiveness after a period of time. Usually when stores print an expiration date, its because they can't sell it according to FDA regulations. In the cases of yeast, baking powder, and baking soda, the longer the substance sits on the shelf the less effective it becomes. Your cake is fine, although its not as tall as you'd hoped.

The expiration date for baking soda is for reactivity, as you have seen. It should be okay to eat but get some new baking soda.

the cake should be safe to eat. this is why it didn't rise as it should of as the gas in the baking soda is flat

thats a good question, and goin on the side of caution, i would say not. but there is no real way to tell, so if you want, cut a small piece and test it.

yes, but it might me kinda chewy, dump old down the drain and go and buy a new box
