Eat a low sugar/fat cereal, such as oatmeal or other that specifically are lower in fats/sugars and add fruit to that breakfast. I eat for example, a bowl of cheerios with a banana and some strawberries or grapes. If you would like to eat something different, fix you some eggs with turkey bacon for breakfast. Cut out the bisquits, the bread, the pancakes. Occasionally they are ok, but too often they'll go straight to your hip.
For lunches eat salads, meats, fish, a tuna fish sandwhich or a sandwhich with lean lunchmeat. Don't add the fries, they have too many calories. In general, you can eat what you like, just opt for a leaner version with less sodium and less fat.

for supper eat tons of vegetables with no more than 2 servings of meat. You can eat all the salad you want to without gaining weight--provided that you are sensible with the dressing, becaus some dressings are loaded with fats. I make my own dressing with a spoon of sunflower oil and a spoon of balsamic or herb vinegar, an onion, a little pepper and a dash of salt.

I am 55 and have maintained my weight since 30 years now by following these simple rules. If I have pizza, it will be only once every blue moon, the same with fattening sandwhiches like Panera sandwhiches. I still weight 165 lbs(I am 5'6) and have maintained a clothes size 10/12 for all these years. Dieting will not do any good.
What you really have to watch out for is hidden calories in drinks. I had to get away from sugared sodas, cappucinos and the like, because they are loaded with calories. Now, if I have something like ice cream, a cappucino or a brownie, I actually do not eat supper then.
Also, as a general rule, try not to eat after 6pm for our metabolism shuts down around 7 or 8 pm to get ready for sleep!!!!!

The eggs are a very good idea if you don't have any cholesterol problems. My doctor recommended that I eat
2 eggs, 2 turkey sasuage links and wheat toast for breakfast.
I was eating oatmeal and toast and my doc. said I wasn't
getting enough protein. (turkey sasauge isn't bad at all) For
a snack I eat a protein bar or peanut butter with apple. Lunch
is pasta salad with chicken. The pasta isn't that great but
adding the chicken(or tuna) makes up for the pasta giving
you a balance of protein and carbs as well as some fat.
You can also eat lean meats, lean ham, cheese almost
anything is better than the junk food. Good luck!

Here's a typical day for me. I'm 5' 4" and am able to maintain a weight of 115 lbs. I have a few cheats during the week too. I go out to Subway on Saturday afternoon and have pizza on Fridays as well. Oh and if there are donuts at church, I allow myself one.

BREAKFAST (6 AM):
Oatmeal (1/2 cup of oats)

SNACK (9 AM)
Low Fat English Muffin with
FF Strawberry Cream Cheese

LUNCH (NOON)
*Lunchmeat sandwich using FF mayonaisse
Lean Lunch Meat (usually lean ham or turkey)
2 Slices of Light Whole Wheat Bread
*2 Medium Pickles
*Fat Free (FF) Cottage Cheese with fruit in it. (I cheat and add canned fruit like mandarin oranges or pineapple).
*If I really feel like splurging, I'll have some FF Pringles (measure out the serving if you do). I don't have this very often, though. It's not really a very healthy food. Sure tastes good, though. ;)

SNACK (3 PM)
*FF Yogurt (only 80 calories)!!
with some fruit mixed in with it. Usually a cut up orange.

SUPPER (5:30 PM)
*3 oz of Meat (lean)
*A large salad with a good variety of veggies like broccoli, onion, carrots, tomato, and green pepper. I top it with a FF dressing (used in moderation)
*Another Vegetable (my favorite is a mix of corn, peas and carrots)
*A Grain (brown rice is a favorite)

DESSERT
*This is my sweet for the day. One that's really low in calories is a crustless pumpkin "pie" using a sweetener like Splenda and egg whites or Egg Beater. Another favorite is Diet Soda Cake. A good place to get recipes is Bootcamp Buddies (http://www.healthdiscovery.net/forums/index.php?)

LATE NIGHT SNACK (8 PM)
Air popped popcorn sprayed with PAM. I make a good bunch of it. (See serving size on the bag). Sometimes I even have a serving and a half.

why remove the egg whites, which are all protien! Do you mean the egg YOLKS? Egg yolks are all fat, but they are good for you and I believe that nature intended us to eat them together.. fats transport fat soluable vitamins.. you need fats!
My recommendation - go for balance (protien, carb, fat at each meal - you also need 1000mg of calcium everyday, not just for bones but for many body functions)
Breakfast - yogurt with fruit and 6 almonds
or... oatmeal, fruit and 3 pieces of turkey bacon
or.. 2 eggs, fruit and milk

Lunch - veggies with dip, 4 oz meat, fruit
or... salad with dressing and sunflower seeds
or.. a sandwich with lettuce leaves instead of bread, mayo

Dinner - steak, veggies, sweet potato, yogurt or milk
or... chicken, brown rice, veggies with butter

you would do better to remove the yolks and not the whites. The yolks are full of unhealthy fats, while the whites are pure protien.
suggest you visit the american diabetic association's site and the american dietetic association's site as well.
