HELP!!!!! ......Also I need to make a side dish that is a crowd pleaser. I really appreciate your help. Thank You.

THREE CHEESE BAKED MACARONI
3 c. elbow macaroni (cooked and drained)
1 can Cheddar cheese soup
1 c. milk
1/4 tsp. salt (optional)
1/4 tsp. pepper
1/2 c. shredded Swiss
1/2 c. shredded Cheddar
1/2 c. grated Parmesan
1 can French fried onions
Preheat oven to 350 degrees.
In 1 1/2 quart casserole, mix hot macaroni, soup, milk, seasonings and 1/4 cup of each Swiss, Cheddar and Parmesan. Add 1/2 can fried onions. Bake uncovered at 350 degrees for 25 minutes or until heated through.
Top with remaining cheese and onions. Bake uncovered 5-8 minutes until cheeses are golden brown. Makes 4-6 hearty servings.

OUTDOOR CHEESE POTATOES

3 or 4 lg. potatoes, pared
1 sm. onion, chopped
1/2 lb. (2 c.) white American cheese, cubed
1/2 c. butter

Slice potatoes onto a big piece of heavy duty foil and sprinkle with salt and pepper. Add onion and cheese cubes. Slice butter over all. Mix on the foil; bring edges up; leave a little space for expansion steam; seal well with double fold. Place package on grill. Cook over coals about 1 hour or until done, turning several times.

Are you next door to the camp for 1,000 miles from the camp??????

I would suggest no knowing anything about these things--

SPICED APPLE SAUCE COOKIES

1/2 cup shortening
1 cup sugar
1 egg
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1 cup unsweetened applesauce

Cream together the shortening and sugar. Add egg; mix thoroughly.
Sift flour, then measure. Sift measured flour with salt, baking soda, baking powder, and spices.

Add dry ingredients to creamed shortening and sugar, alternating with applesauce, then dry ingredients, etc, until all is combined.

Drop by tablespoonfuls onto lightly greased cookie sheets and bake in a preheated 375°F oven 8 to 10 minutes or until golden along edges.

Hey! I've got the PERFECT kid friendly, camp friendly dish... and it works for picky kids and kids who will eat ANYTHING.

Haystacks.

Take corn chips or tortilla chips
top with beans and/or ground beef
top with lettuce (shredded)
and add:
tomatoes
salsa
onions
cheese
guacamole
sour cream

kids and pick and choose what goes on their haystacks!

This works as a main course or as a side dish!!

You can do the same "build-it-yourself" concept with breakfast burritos...

large burrito (flour)
beans
eggs
cheese
salsa
tomatoes
ground beef if you like or sausages

the kids again can pick and choose what goes on their burrito!!!

Have fun with it... make it an adventure... get everyone involved in preparing the food... they'll have a blast!

PIZZA CASSEROLE A CROWD PLEASER

2 lb. ground beef
1 lb. spiral macaroni
3 cans pizza sauce
6 c. grated Mozzarella cheese
3/4 lb. sliced pepperoni
2 (13 x 9) pans

If more sauce is desired, spaghetti sauce may be added. Brown ground beef. Cook spiral macaroni. Mix together with pizza sauce. Spread 1/2 of mixture in each 13 x 9 pan. Top with pepperoni slices. Sprinkle with Mozzarella cheese. Cover loosely with foil. Bake at 350 degrees for 30 to 40 minutes.

KID'S FAVOURITE COOKIES

1 c. peanut butter
1 c shortening
1 c. brown sugar
2 eggs
1 c. flour
1/2 tsp. salt
1 tsp. baking soda
2 c. oatmeal
1 tsp. vanilla
1c. chocolate chips

Combine peanut butter, shortening and brown sugar; add eggs and vanilla. Add dry ingredients and mix (it is a very hard mixture). Drop onto ungreased cookie sheets and bake at 325 to 350°F. for 8-10 minutes.
YIELD: Six to eight dozen.

Have you ever heard of "pudgie pies"? You buy an iron sandwich maker, that has long handles and a latch to hold it closed. Butter the outside of the bread, place one slice (butter side on the metal) on each half of the cooker. Put ant of the below inside, latch, and cook in the coals like a grilled cheese sandwich (watch carefully--they burn easy).

Mozzarella, pepperoni & pizza sauce; ham & cheese; scrambled eggs & cheese; sliced hot dogs & canned chili; cooked bacon & cheese (tomato optional); or, for a sweet treat, your choice of pie filling with either bread or sliced pound cake (a dab of cream cheese with pound cake & blueberry is GREAT!!)

Side dish, Cheesy Hash Browns

1 2# bag hash browns, thawed. 2 cans undiluted cream of mushroom soup. 2 cups sour cream. 3 cups shredded cheddar cheese.
You can bake at 400 for 40 minutes, or put in a slow cooker for about 4 hours on high.

Snicker Salad

Cut up a few snicker candy bars (or even the mini ones work) depending on how much you are making, personal taste, etc.

Then cut up an apple or two (again, depending on how much you are making, personal taste, etc.)

And dump them in a bowl, and add Coolwhip to the mix - just make sure you have more Coolwhip than apples/snickers, so that the apples/snickers are completely swamped in Coolwhip! Just stir a bit, and you have something that everyone can enjoy!

How about...

Heath Bar Cookies

56 saltine crackers
1 cup butter
1 cup brown sugar
1/4 teaspoon baking soda
12 ounces milk chocolate chips
1 cup chopped nuts
Line a large cookie sheet with foil. Spray with cooking spray. Lay saltines to cover cookie sheet. Melt butter over medium heat, add brown sugar, bring to boil and boil for 1 minute only. Remove from heat and add baking soda. Spread mixture over crackers (make sure all crackers are covered with mixture). Bake for no longer than 10 minutes at 375 degrees.
Remove from oven and sprinkle with chocolate chips -- spread the chocolate as it melts over all crackers. Sprinkle with chopped nuts. Let cool overnight or until set.
Note: We let ours cool overnight and decided to break the cookies apart instead of cutting into bars.

Spaghetti will be nice and a good meal to feed many people. Side dishes for this could be tossed salad and garlic bread.
Macaroni and cheese for another meal's side dish. Main entree could be pork chop or chicken or meatloaf.

you can never go wrong with camp bags! these are made at home with aluminum foil, about 5 sheets per bag, and various meats and veggies. i make potato bags with cut potatoes, onions, peppers and sour cream. i season them with Sazon or Adobo. you can also make mini meat loaves, wieners and beans, chicken breast with veggies and any number of easy treats. they are so fun and easy to make, and they steam out beautifully after 10 minutes or so right on the coals. use plenty of foil or you may burn your treats. remember to turn them evey 3 minutes or so.


just wrap your camp bags securely with lots of foil and you too will be a happy camper:)

Easy, Eggless Strawberry Ice Cream

INGREDIENTS
2 cups whole milk
2 cups heavy cream
1 cup white sugar
1/4 teaspoon salt
2 teaspoons vanilla extract
2 cups mashed fresh strawberries
2 drops red food coloring (optional)

DIRECTIONS
In a large bowl, combine the milk, cream, sugar, salt, vanilla, strawberries, and food coloring. Pour the mixture into the freezer bowl of an ice cream maker, and freeze according to manufacturer's directions.

Baked Calico Rice serves 20

INGREDIENTS
5 (28 ounce) cans diced tomatoes, undrained
5 cups chopped onion
5 cups chopped celery
3-3/4 cups chopped green pepper
3-1/3 cups uncooked long-grain rice
1-2/3 cups vegetable oil
5 bay leaf
1 tablespoon and 2 teaspoons salt
1-1/4 teaspoons pepper

DIRECTIONS
In a 2-qt. baking dish, combine all ingredients; mix well. Cover and bake at 350 degrees F for 1 to 1-1/4 hours or until rice is tender, stirring occasionally. discard bay leaf before serving.

It's a favorite not only for its good taste, but for its simplicity of preparation. A potluck and picnic pleaser, this side dish travels well.
