I need to use sun dried tomatoes in a recipe, but I do not want them to be oil packed. So, I bought the dry ones. I need to know how to hydrate them and give them some more flavor. I put them in a bowl of water... but the tomatoes didn't taste all that great... what should I add to the water?

The most common method of hydrating sun-dried fruit is just covering the fruit in hot water. The process is also referred to as re-hydrating or reconstituting.

Truthfully, the dry ones are just not very good. I would add a little white or red wine in a bowl and re hydrate them that way. You can dissolve a little tomato paste in the bowl also for a little more kick. Good luck and next time buy them from an Italian deli in the oil, much better.

What I would do is just put them directly into what you are making so that the spices from what ever juice will absorb in the tomatoes instead of plain water. Also for next time they have sundried tomatoes in a jar that are packed in water with a little salt to keep them fresh so you don't always have to buy the oil soaked ones.

Was it boiling water? Then they should taste about the same, they just won't have the oil flavor. I love dry-packed sun-drieds. Maybe the package was stale? Or maybe it was an off-brand? I don't know, my taste buds got used to dry-packed pretty quickly.

Chop or slice them, whichever the recipe calls for, put them in a bowl cover with a small amount of boiling water, just to cover. Either you used too much water or it wasn't hot enough.

dehydrating them is what gives them more flavor. Rehydrating them will dilute what flavor they have.
