i need help on how to bake it .

I'm not thinking that baking ahi tuna actually makes the most of this delicious fish! Since ahi's flavor is its very best when seared, but rare, have you considered seasoning it with kosher salt, ground peppercorn, and then searing it on both sides in a little olive oil? The inside should be rare. Serve with a spicy aioli sauce. If you prefer your tuna cooked thru, then consider poaching it in a savory liquid that would include white wine, peppercorn, lemon slices and some dill sprigs. Place fish in skillet or poaching pan, add liquids and spices, cover and simmer until tuna flakes easily. Serve with your favorite sauce.

Broiling is the best way to go. If it's good tuna, it doesn't need a whole lot of help, and the broiling process will ensure that it's juicy and a bit crisper on the outside.

I would just brush olive oil on top, dash on a few of my favorite herbs and/or spices for good measure (fresh rosemary would be good), and stick it in for a few minutes until done. It's done when it flakes off with a fork. Don't overcook it or you'll lose the juiciness.

Remember, good tuna is eaten raw all the time, so there's little danger of getting a food-borne illness from not cooking it enough, but overcooked tuna is not a pleasure to eat.

TUNA BAKE

2 thick tuna steaks (at least an inch thick)
4 cloves garlic - chopped
1 large onion - diced
1 yellow pepper - pipped and chopped
1 red pepper - pipped and chopped
1 green pepper - pipped and chopped
1 jalapeno pepper - halved, pipped and finely chopped
2 or 3 sprigs of dill
1/4 cup of olive oil

Preheat oven to 350 degrees.
Line a 10" by a few inches deep baking tray with aluminum foil tucking it into all corners. Cut enough foil to leave a large overlap; this will fold back across the tray.

Evenly distribute a few tablespoons of olive oil in the tray. Cut the tuna almost in half horizontaly, leaving an inch or so to hold the fish together.

Evenly stuff each steak with a diced clove of garlic in each. Place steaks in the tray. Evenly distribute onion, peppers, jalapeno pepper and garlic into the tray, covering the steaks.

Place a sprig of dill on top of each steak. Drizzle remaining olive oil over the steaks and the veg, amount of oil to use is personal preference, this makes an excellent "gravy" when cooked. Fold the foil over the tray being sure to cover tuna and loosely tuck it in. Place in the oven for about 40 mins, for thicker steaks about 45/50 mins. Remove and serve on a bed of white rice. Drain stock from tray and serve.

Makes 4 servings. (Homemade garlic bread and a black grape salad accompany this meal superbly).

Don't bake it. If you want to enjoy it at it's best, drizzle with olive oil, lemon juice, season with salt and pepper and flash fry to sear the outside, 2 minutes on one side, 1-2 minutes on the second side. You'll want it rare, if you cook it longer than that, save yourself some money and buy tuna in a can. It dries out terribly.
