That is, could I stack two 12V DC adapters and get 24V DC?

Yes you can stack two 12vdc to get 24vdc. The secondary of the transformer is always isolated from the AC source. But my question is the practicality of it?

Yes they have. You can conect the (+ )of one with the ( -) of the other adapter. The remainder (+ ) and ( -) will have 24V dc.
