ok, i have to make a summer desert this tuesday.
it has to be able to be made within an hour (including cooking, if needed to be cooked).
I have thought of trifles etc but i want something a bit different.

know any recipes?
ideas please.

Here you go...

Fruit Kabobs with Dip

INGREDIENTS

Assorted fruit--green grapes, watermelon balls, cantaloupe balls and strawberry halves

1 cup (8 ounces) plain yogurt
1/2 medium ripe banana
4 teaspoons honey
1/8 teaspoon ground cinnamon
(*I always add 1/4 teaspoon vanilla)
SERVINGS 12

PREP 15 min.
TOTAL 15 min.

DIRECTIONS

Thread fruit alternately onto skewers. In a blender, combine remaining ingredients; cover and process until smooth. Serve with kabobs. Yield: 1-1/2 cups dip.

Creamsicle Fruit Dip


2 cups (approximately) 5 min 5 min prep

1 (16 ounce) container sour cream
1 (6 ounce) can orange juice concentrate, thawed
1 (3 ounce) box instant vanilla pudding


Mix together the sour cream and oj.
Stir in the pudding mix, making sure all the powder is dissolved and fully incorporated.
Chill, covered, until serving.

Fruit Kabobs with Margarita Dip

1/2 cup whipping cream
3 cups angel food cake or poundcake, cubes
3 cups fresh fruit (strawberries,cubed melon,and/or seedless red or green grapes)
1/2 cup sour cream
1 (3 ounce) package cream cheese, cut up and softened
1/4 cup sifted powdered sugar
1 tablespoon tequila
1 tablespoon orange juice concentrate
1 tablespoon lime juice

For the margarita dip: Place sour cream,cream cheese,powdered sugar,tequila,orange juice,and lime juice in a blender or food processor cover blend until combined.
Add whipping cream cover and blend until fluffy and mixture mounds.
Serve immediately or cover and chill up to 24 hours.
For Kabobs: Arrange small skewers of cake and fruit on serving platter Serve with dip.

Annie's Fruit Salsa and Cinnamon Chips

"Easy to make, tasty fruit salsa and cinnamon tortilla chips.

Original recipe yield:
10 servings

PREP TIME 15 Min
COOK TIME 10 Min
READY IN 45 Min

INGREDIENTS
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor

10 (10 inch) flour tortillas
butter flavored cooking spray
2 cups cinnamon sugar

DIRECTIONS
In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
Preheat oven to 350 degrees F (175 degrees C).
Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit and spice mixture.

Ambrosia is a Southern USA Tradional Dessert. Here is a lighter version.

I use whatever fruit I want/ have available.
Banana
Pineapple (canned, chunk or tidbit or crushed)
Mandarin orange slices (small can -- 11oz)
Apple chunks for crunch (Granny Smith work well)
Red or green grapes (seedless)

Mix 1 8oz carton of vanilla low-fat yogurt with 1 banana blended in the blender. Pour over mixed fruit.
Coconut to taste (optional)

There is a really simple dessert my dad makes, but melting might be an issue. He gets a box of vanilla ice cream sandwiches and lines the bottom of a glass pan. Then he covers them in chocolate syrup, then a layer of coolwhip. Then he usually put a design on top of the coolwhip with the chocolate syrup. If you are pressed for time and have a way to keep it cool, it might be an idea. I really like it.

Peanut Butter Brownies!

Bake a regular batch of brownies. It needs to be a 9x13 pan size batch. Let them cool.
Pour 1 bag or Reese's peanut butter chips (in an orange package sold by the chocolate chips) and 1 can of sweetened milk in a pot. Melt the chips and milk, but you must be constantly stirring them or they will burn.
Once melted, pour on top of your brownies.
Drizzle two melted Hershey bars on it in straight lines going either way. Take a butter knife and "slice" down the opposite way of the chocolate so that it makes wave shapes.
Sprinkle with chopped pecans.
Let it all cool and cut into brownie size servings.
This goes well with a scoop of vanilla ice cream.

This dessert is really rich and tastes really good! It's always a hit wherever I take it!

Watergate Salad
1 lg can crushed pineapple
1 box pistachio instant pudding
1 c. mini marshmallows
1/2 c. coconut
1 lg carton Cool whip
Mix pineapple and pudding mix together; then add marshmallows,
coconut and Cool whip. Mix and Chill.

This is my version of ambrosia. My family is not too crazy about fruit cocktail, so mine is simple.
4-5 small cans of mandarin oranges, drain all the cans except one
1 bag of mini marshmallows
1 small container of sour cream
Mix all ingredients and place in bowl, cover and store in refrigerator for at least one hour. The longer the better. Believe it or not this is a sweet tasting dish, i guess its because of the marshmallows.

7-layer bar cookies...
These are YUMMY!!!!
1/2 c. butter or margarine
1 c. graham cracker crumbs
6 oz. chocolate chips
6 oz. butterscotch chips
1 1/3 c. flaked coconut
1/2 c walnuts
1 can sweetened condensed milk
Melt butter in 13x9' pan. Sprinkle crumbs evenly over butter. Layer with chocolate chips, butterscotch chips, coconut and walnuts. Pour milk over all. Bake @ 350' for 30 minutes. Cool. Cut into bars.

Mud Pudding

1 Package instant vanilla pudding, prepared. 1 8 oz bowl Cool Whip. 1 pkg Oreos (or similar cookies), crushed.

Mix all together in a large bowl, garnish with a couple whole cookies.

You can even make this the day before.

I love this summer dessert:
angel food cake ( you can purchase store bought)
cool whip (or whipped cream)
fresh strawberries (or whichever fresh fruit you prefer)

Slice the cake
Add fruit
Add cool whip
Top with fruit
Simple and delicious

SIMPLE PEACH SORBET
--------------------------------------------------------------------------------

Prep. time:
5 min.

Serving:
4 (1/2 cup) servings

Ingredients:
2 cans (15 oz. each) Sliced Yellow Cling Peaches
1 tsp. vanilla extract

Preparation:
1. Place one unopened can of sliced peaches in freezer until solid (about 24 hours).
2. Submerge unopened frozen can in very hot tap water for 1 minute. Open and pour any thawed syrup into food processor bowl. Remove fruit from can; carefully cut into 8 chunks.
3. Place into food processor with vanilla (blender or mini-processors not recommended). Process until smooth, scraping blade as needed.
4. Serve immediately or freeze until ready to serve. Garnish with remaining can of unfrozen peach slices and fresh mint, if desired.

Cut the top of a smaller seedless watermelon, combine the cubed melon, fresh strawberries, blueberries, kiwi, etc. put it all in the hollowed out watermelon half. Serve on a tray to catch any juice that may escape.
