INGREDIENTS:

* 2 large sweet potatoes
* 1 tbsp of olive oil
* 1/4 tsp salt

PREPARATION:
Preheat the oven to 450 degrees.

Cut the sweet potatoes into 1/2 inch strips or wedges and toss in the oil and salt. Arrange in a single layer on a nonstick baking sheet. Place in oven for 30 minutes, turning once.

I love them in the oven Wash them and poke them with a fork and bake then about 1 hr in a 350 oven. They are the best. When you cook them on top of the stove you loose some of the flavor and color. You may want to line the pan with tin foil or something cause when they cook they will have their natural syrup come out and clean up will be a snap.

Sweet potatoes, peeled or unpeeled, cut in 1 inch cubes, roast for 30 minutes at 150degrees, prepare a mixture of 2 parts maple syrup, 1 part worcestershire sauce and 1 part sweet soy sauce such as kekap manis.Rgiht after taking potatoes out of the oven, coat the potatoes with the mixture and serve. or maybe set aside can be served cold.
Another way is simpy bake it coated with salt herbs and olive oil.

Here in the south USA..we have two different kinds..a light one and dark orange the dark orange is the one we prefer. I wash and put vegetable oil on the skins..then stick holes in with a fork...about three holes each...then place on a baking sheet and bake for about 45 minutes on 375 degrees depending on the size...when done they should be oozing the sugars test with a fork or knife it should go in very easy....now remove from oven and cut a slit down each one...use as much butter as you like let it melt and EAT...they go great with chicken, beef and pork or eaten with broccoli steamed...as a vegan meal....they are loaded with vitamins and minerals...ENJOY..Mama Jazzy Geri
note...you can mix cinnamon and sugar together...and add a dab of this mixture on each one...after it's cut open..then placed back in the oven to melt the sugar....

We also bake them whole then peel them and lay them in a long baking pan...then mix up a fruit based syrup....pour over the sweet potatoes and return to the oven until nice and shiny.
I usually use pineapple juice, butter and dash of salt...brown sugar...cloves and cinnamon...it all depends on what you have on hand ...but any spices like nutmeg, allspice or a pumpkin pie spice works well with these sweet potatoes...

many southerners use sweet potatoes for making a pie...if you like pumpkin pie you will enjoy making it using the cooked sweet potatoes...but put them through a sieve to remove the strings before making the pie ....

some people slice the raw sweet potatoes very thin and fry them like potato chips....

but going back to the first idea...of baking them whole is the easiest and most healthy...bye now until we meet again...

Just cook them like Potatoes. Boiled, Mashed, or Roasted.

Roast them like normal potatoes, though go easy on the oil. I like them cooked with a little butter on top.

I make wedges with them and serve them with a nice cool dip. If you cook ordinary potatoes and do a couple of sweet potatoes as well and them mash them together with butter and milk. Yummy.

We peel and spray lightly with oil and roast for about 40 mins. YUM.

Or we peel boil and mash also YUM, sometimes we mix with other root veg like carrots and swede in the mash. We make it into soup too. Lovely.

There are some wonderful puddings, but I don't know the recipes. Hope someone answers with a few ;o)

Bake them in the oven just like a regular potato. Then while they are hot add cheese, butter and chives. It's so good.
