The yeast needs time to reproduce and start metabolizing the flour. It gives off co2 which will expand forming the "bubbles" in the bread.
If you baked it right away, you would get a flat bread just as if it had no yeast at all.

The yeast makes bread rise. it gives it those little pockets of air you see in the slices. As for the cloth...yeast will grow in size in a warm moist place, so a baker (or anyone actually) will put a moist warm towel over it to give it a push. The yeast starts to eat the sugars in the bread and it will create air pockets. Then the bread stretches from the gluten(the sticky stuff in flour) It makes bread soft and fluffy if you let it rise properly.

Yeast is a living organism and requires "fuel" in the form of simple sugar to grow. It has to be kept warm in order for the yeast to feed on the sugar and grow and all that takes time, That's why it's covered with a cloth and left in a warm spot for a while before baking.

the yeast needed time to multiple itself into more parts..then it will take effect on the bread dough..the bread dough with the yeast will make the bread dough to rise and more softer...then only it will be suitable for baking
