It is a religiously driven dietary belief or pursuit that completely separates meat-based meals and food items from dairy based.
NEVER THE TWO SHALL meet on the same pot, pan or dish! Or the item will have to be destroyed in a somewhat ritualistic manner.
Regarding the meats and other foods that are identified as Kosher - often prepared in accordance with rabbinical supervision and inspections.
I believe that eating anything from an animal with a cloven hoof is forbidden.
There are also cuts of meat that even if the animal is raised and killed in the proscribed manner that should not be used. I do not know them though.
No cheeseburgers, cheese on chili con carne and so on....

Kosher foods has to do with jewish law. Invalidating characteristics may range from the presence of a mixture of meat and milk, to the use of produce from Israel that has not been tithed properly, or even the use of cooking utensils which had previously been used for non-kosher food.

Strictly speaking, the producer of kosher foods have a rabbi bless the factory, every day. Many producers, though, have a greater dedication to the quality of food they produce.

The chicken or goat, pig or cow. what ever. they bless the animal then slit it's throat and let bleed to death then it's butchered like any other animal. Also HALAL meat is done in the same way ok
