Yaa, this is due to the type of cells present in our eyes. There are mainly two types of cells ---ROD and CONE. Rod cells are responsible for light sensitivity and the cone cells are used for seeing colours. These both of the cells are ligth sensitive, i.e. if light is not present, these cells will not function {that is why we are not able to see during night }. While taking dreams, its dark all around and moreover, we close our eyes so much less light enters our eyes. Due to this, whatever we see i.e. the dreams are colourless, but colourless here means black and white. When even small amount of light enters our eyes, we are able to see coloufull dreams. {which most of the times i also see . :) }.

Now i hope, your doubt is clear........ :)

Dreams will be in black out only. Which means light and shade.Actually colour is seen due to the colour sensor nerves present in our eyes. During sleep no light enter our eyes. We only imagine things with various images already stored in our brain-in our memory. Some time when we sleep during daytime things may appear in colour due to penetration of small amount of light through our eyelids. You know all animals can only see in black and white due lack of colour sensor nerves. So the ultimate question rises now. Which is real? What we see or What the animal see?

Just for the record. Most people dream in black and white, but some people do dream in color, so it certainly isn't anything biological, but I don't think anyone really knows why some dream in color and most don't.

Personally I don't remember almost anything I dream and I don't even think of any of it in terms of black and white or color. I remember emotions.
