As banannas ripen they produce a gas called ethylene - it's a plant hormone that promotes ripening. Keeping them in a sack promotes ripening because it keeps the gas contained and near to the banannas.

Bananas produce ethylene gas causing them to ripen. They should not be put with other fruit as they will cause soft fruits especially, to over ripen.

when visiting the Carribean i was told the bananas were grown in blue bags to keep the insects from marking the fruit and then shipped out in the same bags to stop early rippening.
