Yes thats what the roof racks are for. Just make sure it's secure, a cop could be a jerk and cite you a ticket if it was a hazard, so make sure it's strapped down nice and tight. Plus if it did fall off you could really hurt someone.

As long as the matress and box spring conform to the EPA emmision standards of California you should be fine.

i f you are moving and only method it has to be okay.
Why not ask a cop on Sunday. They are usually helpful on things like this
