What is the prime ingredient in mayo? oil, right? I was a professional baker for many years and never tried the mayo cake, heard about it numerous times but always thought it was one of those urban legend type things. Anyway, I'd use oil in place of the mayo. If your making your own chocolate buttercream to ice it, try substituting the milk with buttermilk, the flavor is incredible.

People usually use apple sauce to replace the oil in cake recipes, maybe it will help to replace the mayo, especially since mayo is comprised mostly of oil. Try a one to one swap.

since basically all mayo is - is eggs and oil - look at a mayo recipe and either use its constituent ingrediants or make the mayo first and use as needed.
is really not hard to do.

have fun and YES mayo in cake is really good. (its just a shortcut to using eggs and oil)

You can't. Try a different recipe, or run out and get some mayo.

Cream Cheese will work. the flavour mught be a little different but thats okay. If there it just a little bit needed, (1tbs or less) cream of chicken soup might work. Try applesauce too!

This may be hard to believe but chopped sauerkraut works really well. Not the water, just the kraut.
