It's written 'chitlins' & it's fried pigs intestines.
If that grosses you out, we use it for sausage skins.
During slavery days, they were given skimpy rations.
They had to develop sources of food to stay alive.
These have now become cultural specialties;
such as Hog Jowls, Black eyed peas & Collard Greens.
These things were considered waste by the owners.

oh! i know what it is. My dad went out with these African Americans for a chitilons or however it's spelled when he was in the army. It's like roasted pig...or oh yeah! He said like Pig guts or something. i know...nice. :) But if that's what she likes, you should respect it. :) (Not saying anything bad just in case u think that. Just telling you that's what your friend might think. You know...that you would say EWW and all!) Happy 2 Help! :)

Not sure of the spelling, but this is the phonetic Chit er lings?
It's like the inside wall of a pigs stomach or something gross like that, lots of folks like them though. Suppose if it's what you were raised on... I dunno.
Hope I helped a little

funny you can't do a yahoo search on that type of food....
Chitterlings (often pronounced [ˈtʃɪt.lɪnz] and sometimes spelled chitlins in vernacular) are the large intestines of a pig that have been prepared as food. They are a type of offal.
