I like a thick sauce truely a gravy style with ground up meats in it. How ever light on spice or hot my ulcer does not cope well with that.

Either use canned tomato sauce (I like Muir Glen Organic) or make your own with vine ripened tomatoes, skinned and seeded. The fast way to skin tomatoes is dip them in boiling water, then ice water, cut around the skin and slip off. Cut in two and clean out the seed. Put the remaining pulp in a deep pot with onions, garlic, and herbs and mash. Simmer until the consistency and taste are right.
Get the best Italian sausage available. Use mild,
Remove from the skin, brown the meats until GB&T (Golden Brown & Tasty).
Add the browned sausage to the sauce, adjust the seasonings, pour over al dente pasta. Enjoy!
