when playing a very simple little "E" note one the high string do i play openly and strike all strings or just the one e string .
so basicaly to play an e note on treble clef do i stroke one string or six?

Just the one string! The open first string E or high E string is noted on the staff an octave and a third above middle C in the treble clef.
The guitar is a transposing instrument. Its pitch sounds one octave lower than it is notated. Although the open E of the first string is noted on the staff an octave and a third above middle C it's actual sound is a Major third above middle C.

not all the notes are tuned to e, so u obviously dont play them all openly when u play e, plus that makes it not treble.
