CHICKEN DARLENE
2 boneless/skinless chicken breasts; ea. sliced in 1/2 horizontally
1 small vidalia onion,thinnly sliced
1 small jar of roasted red peppers; drained, patted dry and sliced into strips
2 tbsp pesto sauce
2-4 thin slices of smoked gouda cheese
2-4 baby portabello mushrooms, sliced
1/4 c italian bread crumbs
1 tbsp parmesan cheese
1 tbsp chilled butter
black pepper
Can be assembled right in baking dish. Start with bottom half of each breast, placed in dish side by side. Place 1 tbsp. of pesto sauce on each breast bottom and spread evenly.
Next place strips of roasted red peppers (about 5-6 thin strips). Separate the sliced onion into rings and place 3-4 rings per breast, adding more to taste. Next place sliced portabello mushrooms to cover onion layer. Last layer is the smoked Gouda cheese, using enough to cover the last layer.
Top each with the other half of chicken breast.
Blend bread crumbs and parmesan cheese and sprinkle on top of chicken. Season with black pepper to taste.
Cut butter into chunks and place on top of crumbs.
Bake in a pre-heated 375 degree oven for 20-30 minutes. Bake covered with foil for the first 15 minutes, uncovered for remaining time until browned. Yields 2 sevings

Perhaps you mean Gouda cheese, it's Dutch.

Chicken
Ingredients:
4 (4 ounce) skinned, bined chicken breast halves
3 ounces smoked Gouda, cut into thin slices (any cheese will do, try Brie or cheddar)
2 tablespoons flour
2 teaspoons vegetable oil
1 cup low-salt chicken broth
1 cup apple cider
1 clove garlic, minced
1 tablespoon honey
2 medium Granny Smith or Red delicious apples (about 1/4 lb.) each peeled and cut into 12 wedges
fresh rosemary
Directions:
Cut a horizontal slit through thickest portion of each breast half to form a pocket; divide cheese evenly among pockets. Dredge chicken in flour.
Heat oil in a large nonstick skillet over high heat. Add chicken and cook 4 minutes on each side or until done. Remove chicken from skillet; set aside; and keep warm in a 250 oven. Add broth, apple cider, and garlic to skillet; bring to a boil and cook 10 minutes or until thick and syrupy, stirring occasionally; Add honey and apple wedges, and cook an additional 5 minutes or until apples are tender, stirring to coat apple wedges with sauce.
Spoon apple sauce over the chicken, and garnish with fresh rosemary, if decired. Yield: 4 servings (serving size: 1 stuffed chicken breast half and 6 apple wedges.)

This is a really nice fall dish. You can prepare the chicken ahead and either cook and reheat before serving when you make the sauce or prepare the chicken with the cheese and refrigerate until ready to cook.

Stuffed Chicken Breasts With Gouda And Spinach Recipe
Ingredients:
4 chicken breast halves
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons butter or margarine, melted
***Smoked Gouda-Spinach Stuffing***
1/2 cup shredded smoked Gouda or Swiss cheese
1/4 teaspoon ground nutmeg
1 package (10 ounce size) frozen chopped spinach, thawed and squeezed to drain
Directions:
Heat oven to 375F. Grease square pan, 9x9x2 inches.
Remove bones from chicken breasts. Do not remove skin. Loosen skin from chicken breasts. Make Smoked Gouda-Spinach Stuffing. Spread one- fourth of the stuffing evenly between meat and skin of each chicken breast. Smooth skin over breasts, tucking under loose areas. Place chicken, skin sides up, in pan. Sprinkle with salt and pepper. Drizzle with butter.
Bake uncovered 45 to 55 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.
Smoked Gouda-Spinach Stuffing: Mix all ingredients.

Bacon Wrapped Smoked Gouda Stuffed Chicken Breasts
4 boneless chicken breasts
4 slices bacon
3-4 ounces smoked gouda cheese
1/4 teaspoon cayenne
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon pepper
Combine, cayenne, garlic powder, paprika and pepper.
Flatten chicken breasts to approx 1/4" thickness.
Season both sides of chicken with the cayenne mixture.
Place small piece (s) of cheese on chicken and roll up, pressing firmly.
Wrap each stuffed breast with a bacon slice and then brown over medium heat until bacon just begins to crisp.
Bake in a 350 oven for 20 minutes.
