BAKED LENTILS WITH CHEESE

Yield: 6 servings

1 package (12 ounces) lentils, rinsed
2 cups water
1 bay leaf
2 tsps salt
1/4 tsp each pepper, marjoram, sage, and thyme leaves
2 large onions, chopped
3 cloves garlic minced
1 16 oz can tomatoes
2 large carrots, cut in 1/8 inch slices
1 stalk celery, thinly sliced
1 green pepper, seeded and chopped
2 tablespoons chopped fresh parsley
1 1/2 cups (6 oz.) sharp cheddar cheese, shredded

Rinse and pick over lentils, discarding any that float to the top or are discolored.
Place lentils in a shallow 3 quart casserole or 9 by 13 inch baking dish along with the water, bay leaf, salt, pepper, marjoram, sage, thyme, onions, garlic, and tomatoes with liquid from can.

Bake, covered, in a 375 degree oven for 30 minutes.

Remove from oven and stir in carrots and celery.

Cover and bake for about 40 minutes more, or until vegetables are tender.

Remove from oven and stir in green pepper and parsley. Sprinkle cheese on top.

Return to oven and bake, uncovered, for 5 more minutes or until cheese is melted.

Good old Scottish lentil soup .
2 Onions (medium to large) chopped finely
2 large carrots diced.
Ham stock, either fresh or two cubes.
Good sized mug full of lentils

In a good sized knob of butter, par fry the onions and carrots gently, until onions go clear. Add the lentils and also fry them slowly for a short time. Keep a lid on the pan to seal the juices. Either add Ham stock or dissolve two stock cubes in boiled water and stir in. Add tarragon, a good amount of black pepper. Top up with boiled water and bring up to the boil. Turn down to simmer and stir occasionally to avoid sticking. Add a little more water if it thickens too much. Cook on a really low heat for about 2 hours keeping your eye on water level and adding more if needed. It's delicious

Lentils are a great alternative to beans and meat! I generally cook mine in a chicken broth base with onion, diced carrots and celery and a couple of cloves of garlic. When finished, add a touch of honey and season with salt and pepper. These are good with brown rice, ripe olives, and grated cheddar cheese. Or you can season them with cumin and chili powder and make lentil tostadas.

Lentil Burritos:

40 min 15 min prep
4-6 servings

1 cup lentils, rinsed
2 cups chicken stock
1 tablespoon olive oil
1/2 cup diced onions
1 clove garlic, minced
1 cup chopped zucchini
1 cup chopped green bell peppers or red bell peppers
1/2 teaspoon ground cumin
1/4 teaspoon hot sauce (to taste)
1 cup mild taco sauce
4 ounces monterey jack cheese, shredded
8 flour tortillas
Garnish
diced avocados
sour cream
chopped cilantro

1. Wash& drain lentils.
2. Bring to a boil with stock; cover, simmer until just tender, about 20 min.
3. Drain if necessary.
4. Heat oil on medium heat.
5. Cook onion, garlic, zucchini, pepper to tender crisp.
6. Stir in lentils, hot sauce,& taco sauce.
7. Adjust seasonings.
8. Stir in cheese.
9. Spoon 1/2 C of mixture down center of each tortilla.
10. Roll up (Can assemble ahead& reheat rolled in dampened paper towels in microwave).
11. Can be eaten hot or cold.

There are three basic types of lentils (at least):
Red, Yellow, & Green; I use them to make soup.
They each take different soaking &/or cooking times.
Get the directions at the bulk-food store.
