Have you ever tried Mizithra? Its a dried goat cheese that smells like dirty socks and tastes unbelievably good grated on Spaghetti. Other alternatives to the usual romano, parmesan blends might include:
1. Goat cheese (rich, acidic, flavorful)
2. Fontina (acidic, mellow, wonderful flavor when melted)
3. Spanish Manchenga
4. Aged Jack cheese (grates like Parmesan)
5. Velveeta (yes, I know, a blast from the past!)
Spaghetti is a time to also use your imagination and let your taste buds be your guide. Although traditional cheeses go extremely well with pasta, try something new and see what you think!

I think this question is a matter of opinion. But allow me to point you to several good options.
Any "italian" cheese is good over a tomato sauce based pasta, as well as other pastas, too (so experiment). Try parmesan, of course, but ramano, mozzarella, and other white cheeses, grated over your favorite pasta, are also good options to try.
With that said, I also really enjoy shredded cheddar cheese, topped with sour cream. So good!
And for a bit of a spicy kick, try shredded or grated, you guess it, pepper jack.

My pick would be parmesan; however, there was that one time that I grated up some cheddar cheese (having little left in my larder ...) over some pasta. It turned out pretty tasty!
