Is there any Spanish verb that means "to eat brunch" or any Spanish word that means "brunch" at all? If not, is there any way to say I eat brunch in Spanish?

No, there's not. Some people use the word in English.
When I'm going to do it I usually put both words together:
"Voy a comer un 'desayuno-almuerzo' ".

I have always called it Almoyunar derived from Desayunar (breakfast) and Almorzar (Lunch).
It is true there is no specified word in latina america or Spain bc the meal times are also tied to the actual TIME that one does it. As mentioned before, Desayunar is before noon and anything after is Almuerzo. Then it's "La Comida" at around 3-4pm and then "La cena" at 7-8pm.
What is eaten in during those times must be specific to what is appropriate, which is why Spaniards get their panties in a bunch about eating brunch this way. But the trend catches on and so internationals do end up following with american traditions.

Brunch is a combination of breakfast and lunch and it is not a common thing in Latin America. The best you could say is "yo como" which means I eat (any meal).
If you are trying to explain it to someone, you could say Vamos a comer brunch, una comida que es el desayuno y el almuerzo combinados. That means...Let's have brunch, a meal that is breakfast and lunch combined.

my friends and i have been saying for years "almuerzayunar", which is putting almuerzo-desayuno together, which is in fact what brunch means br-from breakfast and -unch from lunch. So there you have it. That is the sanctified though not sanctioned word.
By the way, this is not a special meal time, but is the meal you have around noon time when you didnt have any breakfast to start with.

No, because there is no such thing as brunch in Spanish.
By the way most people (in Latin America) call anything they eat before noon breakfast (desayuno).

In Costa Rica we (well, at least my friends and I did...) just say "desayuno-almuerzo"... other than that there's no word for "brunch"; actually, not many people eat brunch...

yes brunch doesnt exist, spanish peopel are very adament about their meal times. La Comida - translation of lunch in spain and mexico, is hte most important meal of the day, and this meal, culturally would never be allowed to be mixed with breakfast, which is una comida cualquiera, especially in spain. its like for us, mixng lunch and dinner, woudl be kind of weird. but for spaniards theyre really uptihgt about mealtimes. brunch is an american or anglophone thing and explain it as that , if you care to.

i don't think so.. there's seperate verbs for both lunch and breakfast which is desayuno and almuerzo .. just add comer to the beginning and it meanns 'to eat'
