Ripe pineapples should smell sweet. However, in most instances when you go to the grocery, they are mostly yellow/green. Pick the best looking one (no bruising or any other discoloration) and leave it on your countertop for 3-4 days until they ripen. So if you plan to have some ripe pineapple, don't expect to have one today when you go to the grocery.

A pineapple will ripen from the bottom to the top. If the bottom is sweet smelling and the top is not ,it is just starting to ripen. If it smells sweet at the top you should have a well ripened pineapple. Inmost cases the pineapple that is soft and looks like it about to start going bad, is the best tasting and very sweet. Most pineapples are from one of two cuts. the first pineapple is grown on the plant. it is normally larger in size. It is harvested and a secondone grows however it is smaller than the first. I feel that the first cut is the best taste.

Look for a pineapple that has less green around the "eyes". A ripe pineapple will be more golden in color. If it is golden brown then it is over ripe.

Look at the pineapple. It should be brightly colored, with fresh-looking, deep-green leaves. Avoid pineapples with bruises, brown leaves or moldy spots.
Smell the pineapple. It should have a sweet, pineapple smell at the stem end of the fruit.
Pick up and touch the pineapple.It should be plump and heavy for its size. The surface should give slightly when you push on it, but there should be no large, soft spots that cave in under your touch.

Three things.
1: smell it. it should smell sweet & pineappley, without you having to stick it right to your nose!
2: pull on a leaf from the middle. it should slide right out easily if the pineapple is ripe.
3: try to twist the whole base of the leaves. if it's ripe they should be "loose", you should be able to wiggle it around a bit.
