Pretty much all of them. If you are far enough from the actually blasts, you will most likely survive.
People are deathly afraid of radiation, but it is something we deal with on a daily basis. Every X-ray, microwave oven, and even eating some food will raise your exposure.
Yes the initial exposure in the vicinity of the bombs will kill millions of people from radiation exposure. But after the fallout settles, you would be able to survive. As long as you don't breathe in the contaminated fallout to a high extent, you will be able to live.

Probably rats. Most sea life would survive. Actually, probably a large number of animals smaller than a cow or deer would survive, especially in remote areas.. They reproduce faster, and so can basically reproduce faster than cancer will kill them. Larger, long lived animals are more at risk overall.
And not every area would recieve the same amount (or even any) fallout. A nuclear war would kill mankind (unless some tribe in a rainforest or desert or something survived) but the planet would do just fine a couple thousand years later.

If we are suddenly exposed without prior information(whatever knowledge we have is useless!), ther will surely be a holocaust.
Insects like cockroaches can tolerate 1000 times more radiation exposure than humans.
So other than a cockroach, I would vote for TERMITES.

Human will probably survive. There is probably a missile sub refitted to hold a dozen people, and supply them for twenty years. Then, they thaw embryos, and start over.
