First off your steak will cook much better near room temp, so let the steak sit out. Preheat your grill to the highest temperature it will reach. Next sear the steak to lock in the natural juices on the hot cooking grid about 1-2 min per side. If you want nice grill marks rotate (not flip) the steak 90 degrees during searing. Next turn the heat down to medium to cook the inside of the steak without burning the outside. I like mine medium rare which takes about 3-5 min (depending on thickness) per side after searing. Always let the steak "rest" off the grill for about 1 min before cutting to let the juices spread evenly throughout the meat. Enjoy!

We use a charcoal grill, so I wait til the coals are good and hot......I never really measure temp, just grill til medium/rare - you can tell by the way they feel if done or not.......Good luck & enjoy grilling!

Low to medium heat at first and then up it towards the end to give it a nice grilled flavor and color.

Cook it on high heat if you want it rare and low heat if you want the middle to cook through. If you want it rare don't lieave it on there too long though. I like to take samples when it's cooking but I don't tell others abou that.
