i've just made some nice fruit chutney but am unsure of whether i seal the jars when the chutney is still warm, or whether i wait for it to cool first.

You put it in the jar while it is still hot. The cooling is what will provide the seal on the jar. The chutney will contract as it cools creating a vacuum and seal the jar. If you let it cool first, the jar will not get a good seal and it will spoil much sooner.

DONT SEAL THE JAR. place a plate face side down on top until its cooled. When cooled, seal and do what you will.

Seal them while it is hot otherwise bacteria could get in the food and eventually turn it toxic.

maybe just put the lid on loose while it cools then tighten it

If I remember right you do it hot to eliminate any air in the headspace..??
What does your recipe say??
