Immortal. There would be no point in warning Adam and Eve away from the fruit that would make them able to die if they were able to die beforehand.
Although, i think this demands a further question. Since Adam and Eve were married in the Garden before death entered into the world, then why do so many people assume marriage is only "Until death" when marriage was obviously designed to exist outside of death?

Adam and Eve were both created immortal conditionally. They failed the test, so became mortal like all of us! 1 Tim.6:16 tells us that only God is immortal. Check out www.3abn.org

The story of Adam and Eve was a parable, just like all of the parables Jesus told to get his message across to his followers in a way that was easy for them to understand. It was a way to explain the unexplainable, and impart a message of morality. For argument's sake, though, he would have started as immortal until he tasted the forbidden fruit.

He was created to live forever. Notice the penalty for breaking the one law he had was death. What good would the penalty be if he was to die anyway?
As Romans 5:12 puts it, "Through one man sin entered the world and death through sin. Thus death spread to all men."
That is why Jesus' sacrifice is so important. A perfect life for a perfect life. It allows us to get out from under that curse of sin, so we can live forever on a paradise earth just as God originally intended.
