LOW-FAT, LOW-CHOLESTEROL OATMEAL DROP
COOKIES

1 cup flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1 T molasses
1/2 tsp. salt
1/2 tsp. ground cinnamon
3/4 c. firmly packed light brown sugar
1 1/2 c. Quaker Oats
1/2 c. corn oil
1 egg, beaten
2 tbsp. water
1 tsp. vanilla
1/2 c. raisins

In a medium-size bowl, combine flour, baking powder, salt and cinnamon. Add sugar, stir in oats.
Make a well in the center; add oil, egg, water, vanilla and raisins. Stir vigorously until dry ingredients are moistened.

Drop by tablespoons 2 inches apart onto an ungreased cookie sheet.

Bake in a preheated 350 degree oven for 13 to 15 minutes or until done. Remove cookies at once to wire rack to cool.

Yield: 2 1/2 to 3 dozen cookies.

Soft, tender, flavorful oatmeal cookie and healthy! A really good, non-sweet, oatmeal-raisin cookie.

Good cookie, soft, chewy.

LOW - FAT SUGAR COOKIES

1 1/2 c. confectioners' sugar
1 c. tub butter, room temp.
1/4 c. skim milk
1 tsp. vanilla extract
1/2 tsp. almond extract
2 1/2 c. flour
1 tsp. cream of tartar
1 tsp. baking soda

Cream sugar and butter. Add milk and extracts. Stir in flour, tartar and soda and mix well with mixer. Refrigerate 2 to 3 hours. Preheat oven to 350 degrees. Divide dough in half and roll each half out to 1/4" thick on lightly floured board. Cut into shapes and place on lightly oiled baking sheet. Bake for 8 minutes or until golden. Let cool 3 to 4 minutes before removing from baking sheet.

Low-Fat Chocolate Cookies

INGREDIENTS
1/2 cup unsweetened applesauce
1/3 cup canola oil
3 egg whites
3/4 cup sugar
3/4 cup packed brown sugar
2 teaspoons vanilla extract
2 2/3 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup miniature semisweet chocolate chips

DIRECTIONS
In a large mixing bowl, combine the applesauce, oil and egg whites. Beat in sugars and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to applesauce mixture. Cover and refrigerate for 2 hours or until slightly firm.
Drop dough by rounded teaspoonfuls 2 in. apart onto baking sheets coated with nonstick cooking spray. Sprinkle with chocolate chips. Bake at 350 degrees F for 8-10 minutes or until set

One cookie equals 78 calories
