WOW! You are blessed. I wish I had a box of peaches :)
What to do? Here goes, hope you're ready...
Peach smoothies every morning for a few days
Peaches fried with cinnamon and sugar - yummy!
Peach pie - yep it's awesome!
Peaches and cream in a bowl, just like the old days.
Peaches and ice cream at the end of the day.
Peaches with shortcake(angel food cakes works too) and cool whip.
Can the peaches for future use (winter).
Feeze peach slices for smoothies in the winter :)
ok, now I'm hungry for peaches, good luck, don't work too hard, have a bowl of sliced peaches and sugar for a treat.

Peach Cobbler
Batter
1/2 cup melted butter
1 cup flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup room temperature milk
1 room temperature egg
Filling
1 (28 ounce) can sliced peaches, drained
1 cup sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Melt butter in a 9 x 13 inch pan.
Mix together flour, sugar, baking powder& salt.
Stir in milk& egg.
Pour evenly over melted butter.
Combine peaches, sugar& spices and spread over batter-DO NOT STIR!
Bake 35-45 minutes at 350 degrees until batter comes to the top and is golden brown.
Serve warm with ice cream.
p/s: feel free to cut back on the sugar..it's really good!!

Peach Chantelli
Sliced Peaches, very lightly sugared. With a touch of Triple-Sec.
Mix Whipped topping with Run, until desired flavor and top peaches.
Serve Chilled.
Peach Rumanoff
Peaches, lightly sugared. Refrigerated, until releasing own juices.
Sour Cream, Brown Sugar, and Vanilla. To taste. Mix and top peaches.
Peach Bake
Cut Peach in Half. Remove Seed and Skin. Fill Seed Hole with Dusting of Sugar. Nutmeg and Cinnamon. Wrap 1/2 Peach in thin pie crust. Bake until Done.

My husband and kids love Ham and Bean soup after the holiday. I learned how to make it from my grandfather growing up. You will need: leftover ham cut into small pieces a large onion diced 5 or 6 pieces of celery diced 1 bag great northern beans 2 cans of tomato soup a pinch of salt and pepper 1 ham bone 1 bag of carrots sliced in bite sized pieces Fill a stockpot about half way with water. Add the onion, celery, carrots, beans and ham bone in. Let cook on medium flame until beans are cooked well. then add the ham and cook an addition 30 minutes. Add the tomato soup and cook about 30 more minutes. And your done! This only takes one pot to make so clean up is fairly easy. And I make enough that we can have it for 2 nights. After you make it you can freeze the second nights worth, so another night you can have a home cooked meal without any prep work. This soup is very hearty and I serve it as a main meal with a nice garden salad on the side. Hope I helped, Enjoy your holiday and your meal!

TO DRY PEACHES: Wash and defuss with a terry towel (peeling is not necessary) Then cut into slices directly onto tray. They may tend to stick to the trays, but half way through, turn them over. Eat and enjoy as is, or soak to reconstitute, and then serve with cream and a little honey if desired. PEACH LEATHER: Blend ripe, pitted peaches. Sweeten with a bit of honey if desired. Add a touch of spices if you desire. Dry as for basic leather. Peaches by themselves have a delicious flavor, but this leather can also be combined with apple chunks. TO DRY PEARS: Once again, small pieces are the ruleof thumb. Quarter the washed fruit, do no peel, then slice thin for fast drying. Keep the temperature as usual, around 100F. It is unnecessary even to core pears, since the whole fruit is deliciously edible when dreid. Your willfind your delicate hued, beautifully translucent dried pears to be an aesthtic pleasure as well. PEAR LEATHER: Nothing needs to be added to pears when making leather. Perhaps a touch of spice if desired. Follow instructions for basic leather. Origin: Dry It - You'll Like It! circa 1973. This is one of my fav recipe:
Ingredients:
* 4 ripe Peaches
* 25 g Butter
* 25 g Sugar
* 150 ml dessert Wine/ Orange juice
* 25 g Amaretti biscuits
* 1/2 tsp Cinnamon
Method:
* Preheat the oven to 220 C/ Gas mark 7.
* Halve and stone the peaches, put in an oven proof dish, cut side up and dot the fruit with 25 g butter.
* Sprinkle over sugar and cinnamon and pure over the wine/ orange juice.
* Scatter over crushed amaretti biscuits over the peaches and cook for 8-10 minutes until peaches are soft.
* serve with ice creams.

Peach and Avocado salsa:
3-6 peaches
2 avocados
1 lg onion.
Dice all the above, then add a dash of hot sauce and enough lime juice to keep the fruit and avocados from browning. Serve with tortilla chips or add to a salad. Just get creative.
You might also try making a peach chutney. There are plenty of recipes online for mango chutney and you could easily adapt them.

try making some peach parfaits. we make them at work and they fly out of our grab n go area.
vanilla lowfat yogurt
granola
peaches
layer each ingredient in a cup
and enjoy
or you can take the peaches and cut them into slices. put on a cookie sheet and flash freeze them for a couple hours. take out and put into a plastic freezer bag and put back into the freezer. this way the peaches will not become a big peach clump. you can take out as many as you need and return the rest to the freezer for later.

Try broiling, or baking the peaches with a little sugar on top. It's not a heavy dish, and it's somewhat healthy.

Fresh Peach Crisp Recipe
INGREDIENTS:
* 2 1/2 pounds fresh peaches, peeled, pitted
* 1 cup sifted all-purpose flour
* 1 cup sugar
* 1/4 teaspoon salt
* 1/2 teaspoon cinnamon
* 1/2 cup soft butter
PREPARATION:
Butter an 8-inch square baking dish. Preheat oven to 375°.
Slice peeled, pitted peaches into the prepared baking dish. Sift together the flour, sugar, salt and cinnamon into a medium bowl. Cut butter into flour mixture with pastry blender until mixture resembles coarse meal.
Sprinkle crumbs evenly over peaches in baking dish. Bake at 375° for 45 to 50 minutes, until topping is golden brown and peaches are tender. Serve peach crisp warm with cream or whipped topping.

* 1 cup sugar
* 1 tablespoon butter
* 2 cups hot water
* 2 to 3 cups fresh sliced peaches, or frozen thawed
* 1 cup flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 tablespoon sugar, optional
* 1/2 milk or cream, more or less
* cinnamon sugar, optional
PREPARATION:
In a medium saucepan over medium heat, combine 1 cup sugar, butter, and hot water. Add peaches and bring to a boil. In a medium bowl, combine flour, baking powder, salt, and 1 tablespoon of sugar, if using; stir in milk or cream to form a stiff batter.
Drop large spoonfuls of batter onto the boiling fruit. Cover and cook for about 20 minutes. Spoon out dumplings and fruit into bowl. If desired, sprinkle with a little cinnamon sugar and serve with cream or ice cream. Serves 4 to 6.
