Your question appears to assume that everyone is a Christian. We're not.
I do note, however, that Christians happily wear cloth of mixed fibres which is also forbidden in Leviticus, and to the best of my knowledge Jesus said nothing about this whatsoever. It's always been a pick and mix business, these religious prohibitions and injunctions - certain groups insist that particular things are essential, others have a totally different set.

Acts 10:11 And saw heaven opened, and a certain vessel descending unto him, as it had been a great sheet knit at the four corners, and let down to the earth:

16 This was done thrice: and the vessel was received up again into heaven.
This represents food, and also ministering to the gentiles. But it still is a good idea to follow the Law's dietary laws.

Jesus never said that.
The scripture they refer to is a vision Peter had where he saw clean and unclean animals on a sheet together..it was a metaphor for jews and gentiles.. some monks notes got thrown in later that said "thus he made all foods clean" which is not in the originals and christians have used that as a license to eat whatever they want even though Jesus never did.
As for the Sabbath, Rome changed it from Saturday to Sunday to marry jewish gnosticism with paganism and unite the empire.

Well, all those food rules are part of the Jewish law. Jesus said he came to fulfill the law. So those rules no longer apply,unless you are an unbelieving Jew. Read Matthew 5:17

Read Matthew 15:16:20. It is not what goes into our mouths that makes us unclean it is what comes out of our mouth that makes us unclean.
