I'm making spirl noodles with a V-sauce with fresh mushrooms and a side of rocaotta stuffed noddles with the same sauce minus- the mushrooms

I'm not sure what spirl is. Or rocaotta. Or noddles.

But if by some chance you meant spiral, ricotta, and noodles, then yes, it's too much pasta.

Too much pasta for 1 meal.
Instead, go ahead with your spiral noodles and V-sauce, use your ricotta stuffing to make stuffed mushrooms, but don't put sauce on them.

Here's a guidline for stuffed mushrooms

6-8 mushroom caps stems removed (reserve stems)

1/2 onion, minced
1 clove garlic, minced
6-8 mushroom stems, minced
1 T butter or olive oil
1/2 C ricotta or cream cheese
1/2 C white wine or unsweetend apple juice + 2 T.
Salt and Pepper to taste

Sautee minced onion, garlic and mushroom stems in butter or oil until wilted, add salt and pepper, take off heat, add ricotta or cream cheese and 2 T. wine or unsweetened apple juice. Mix well.

Stuff mushroom caps with mixture, place caps in same pan, with the wine/juice, cover and simmer on low 3-4 min.

I like to add a grating of fresh parm to each cap right at the end.
Additional goodies......flaked crab, baby shrimp, and 1/2 t. lemon zest to stuffing.

For a nice "crusty" top, mix 1/2 grated parmesan and 1/2 dry breadcrumbs, sprinkle on top and set under broiler until bubbly and crispy.

Serve with a wonderful salad........Ceasar salad works well here.

Sounds like too much carbs for one meal. Maybe reserve some sauce and the ricotta-stuffed noodles for tomorrow's dinner.

Too many noodles. Maybe only do one tonight...and then the other another night. They sound beautiful...but come on.....just because you can make them...doesn't mean you should made them all in the same night. Have some variety

Yes, too much noodles at once...is there any meat dish? Chicken? LOL...if there's guys, there must be meat.
