Most of the answers you are receiving are NOT correct. The relationship between your grandfather's 1st cousin's child and you would be "2nd cousin once removed".
The only accurate answers as of my response are: Shirley T, billybonzobones and myself.
To take this one step further - if this relative you met has a child, this child would be your 3rd cousin. The "once removed" relationship means that you would be one generation different than the person you met. This person's child, however, supposedly would be more your age/generation.

Well, assuming that your grandfather's cousin is a first cousin to him. His daughter would be a 2nd cousin to your father. Therefore she would be your 2nd cousin once removed.

A 3rd cousin would be the Grandkids of your Granparents brothers or sisters, so you are not even that closely related. I guess it would be fourth or fifth cousins if there is such a thing.

OK lets put this into a nother form.... your grandpas Mom or Dad's brother or siter who had the your grandpas cousin. Then The c ousin had a kid of its own...... Yeah i think that make you third cousins.... damn that was confusing!!!
