Heat olive oil in a lg. pan. Add 1-2 cloves garlic minced. To this add 1 bag of fresh spinich. Add 1/2 cup of chicken broth. While this is cooking down ; prepare some pasta. Maybe some rotini noodles.
Cut up some cherry tomatoes in halves and add to the spinich. Drain cooked pasta and add to the spinich. Toss. Add 1 cup each of Asiago and Parmesean cheeses. Toss and serve.

SALAD: Use mixed greens (prepacked and washed), diced veggies like carrots, onion, cucumber, peppers, celery, etc. and some drained (water packed) canned tuna. Drizzle with a little olive oil, vinegar (preferrably red wine or balsamic) and a sprinkle of black pepper.

SANDWICH: Use whole grain bread with some sliced ham, turkey or chicken and top with lettuce, tomato, onion, and mustard or lowfat mayo (honey mustard is good too).

SOUP: Saute some diced veggies (onion, celery, carrots) in a little olive oil. Add to warmed chicken broth with some herbs such as parsley, or thyme and call it a meal.

OMELETTE: Crack and scramble 3 eggs. Add some diced ham or veggies (i.e. peppers, onion) pour into skillet that has been heated on medimum high heat and been treated with melted butter. Use spatula to pull sides of egg away as they cook, allowing liquid to run underneath. Once mostly set, carefully use spatula to flip omelette over and sprinkle with shredded cheese, fold over and serve.

Cut chicken breast in small pieces, cook it with any kind of spices, then pour 1 can of tomato sauce. Final ingredient can be a frozen bag of vegetables let it sit for 3 minutes until vegetables are soft and is ready to go. It tastes good and is super healthy.

Grilled ham and cheese sandwich doesn't take long, and you don't need instructions for it.

You can hard boil eggs the night before, then make egg salad sandwiches.

You can fry a piece of ham and then have a small salad with it.

You can have leftover baked chicken, with a helping of frozen vegetables (they microwave easily.)

You can have a can of sardines with crackers and maybe some soup.

I like to keep a bag of shredded broccoli handy to put on sandwiches; It's a good addition to pita bread and hummus! Also, try new things in salads, like pecans, gorgonzola cheese, and sliced pears or strawberries with spinach and flavored vinagairette dressing! Good luck on your quest for deliciousness!

I had a peanut butter and banana sandwich on twelve grain bread (white is good too) with a glass of milk. Yummy, nutritious and quick!

I had scrambled eggs and toast today for lunch, it was soooo good!!! It took me about 5 minutes to make. Everyone knows how to make srambled eggs and everyone know how to make toast
