Several companies, including Bushmaster, Midway USA, and Rock Island sell complete 7,62x39R upper assemblies that drop right onto an AR-15 lower. There are several in other calibers, as well.
However, the 7.62x51 NATO is too large and powerful for the 'poodle shooter' lower, and requires a larger, stronger lower AR-10 receiver.

You can convert a standard AR in 5.56 to many calibers.
I've seen .22lr, 9mm, 40S&W, 10mm, .45acp, .50beowulf, 6.5mm Grendel, 6.8 Remington SPC, .450 Bushmaster, .300 JDJ Whisper, Etc...,Etc.., Etc...
If you mean the 7.62X39mm M43 cartridge (AK round), then you just need a new bolt, barrel and magazine.
However it is much easier just to buy a complete upper reciever assembly and bolt carrier group and magazine for the 7.62X39mm.
You probably don't want to carry a vice with blocks, torque wrench and headspace gauges around when ever you want to swap calibers.
If you mean 7.62X51mm Nato or any of the many other 7.62mm rounds then you would need a larger, stronger reciever. Such as used in the AR-10/SR-25 or Cobb multi-caliber rifle.
I guess you could use 7.62X25mm Tokarev or 7.62X33mm(.30 M1 Carbine) in a standard reciever, BUT WHY?
As far as I know no one makes such conversion kits, and for good reason.
You can buy a .50BMG upper if you're so inclined! Unless you live in the People's Republik of California

No, it isn't big enough. The theoretically ideal round for a general-purpose assault rifle would be 7mm, about 130 grains, at about 2500 fps. The 6.8 SPC was developed as the closest that could be fit into the AR15 reciever. Of course, you could just get an AR10.
