I am making open-faced sandwiches with toasted wheat bread, pesto,sundried tomatos, and mozzarella. I wanted to spread goat cheese on before adding the other toppings. What could I add to it other than water maybe to make it thin down enough to spread?

If it's a hard goad cheese take the cold cheese and grate it.
If it's soft let it get to room temp, mash with a fork and spread it on the bread. Adding water will make the bread soggy.
Or you could process the cheese, pesto and sundried tomatoes and spread on the bread and put the sliced mozz on top!

Some goats cheeses are softer than others so you wont need to do anything to them otherwise cut the amount you want place on a bit of tin foil and warm in the oven it won't melt but it softens up well enough to spread

First off don't use water on the cheese. It is made with milk so use a drop or 2 of that. Bringing to room temp should make it spreadable.

Actually if you heat goat cheese in the microwave for about 30 seconds it will become soft and you should be able to spread....if 30 seconds isn't long enough add time in 10 second intervals.

First of all, there are different kinds of goat cheese and you might check out ones that are considered "spreadable" as well. I usually let my cheeses sit out at room temperature for at least an hour before serving guests so that they have a chance to "mellow" their flavors. Goat cheese is quite spreadable after its been warmed to room temperature!

Use a soft goat cheese and mix a little cream cheese in with
it. Hope this helps
