What is the purpose of the oil that is on top of the peanut butter when you open the jar?

The oil is a good thing, it means you are getting healthier peanut butter! The oil that separates out into the top layer in a jar of peanut butter is the natural plant oil. Many peanut butter manufacturers 'hydrogenate' their oils which makes them more stable so they don't separate out when they sit on the shelf, but it also makes them have a higher calorie content. They do this because they feel the consumer will think something is wrong with the peanut butter (like it has gone bad) if they see the oil layer.

When you buy a jar that has an oil layer, just grab a spoon and mix the oil into the rest of the product before using it, and it is just as good! Better for you, too!

This oils moves to the top of the jar due to the mass weight of the peamut butter. It is usually just the natural oil from the nuts seperating due to heat or movement. It also helps to keep the stuff sticky and moist and from drying out. Mix it back into the jar.

Looks like you have come across some "peanut oil" separating from the butter. This is a good sign... it means that your brand does not use alot of preservatives.

Thats oil from the peanuts that has settled to the top while on the shelf. Theres especially alot in natural type peanut butter which isnt so thick. Just stir it back in.

You are buying a natural peanu tbutter, one that does not have stabilizers in it to keep the butter emulsified like a Jif or Peter Pan would be.

Just stir it back in. You could pour it off to cut back on fat/calories, but the PNB will be really hard. And the oil is a healthy fat, as fats go.
