FESTIVE PINA COLADA CHEESECAKE
Ingredients:
6 tablespoons unsalted butter, melted
1 3/4 cups graham cracker crumbs
3/4 cup chopped pecans, toasted
1 tablespoon sugar
3 (8-ounce) packages cream cheese, softened
1/2 cup sugar
5 large eggs
1 (8-ounce) can crushed pineapple, drained
1 cup cream of coconut
1 cup sour cream
1/3 cup light rum
4 teaspoons coconut extract
Glaze
Garnishes: whipped cream and toasted coconut
Preparation
Stir together first 4 ingredients, and press into bottom and 1 1/2 inches up sides of a lightly greased 10-inch springform pan.
Beat cream cheese and 1/2 cup sugar at medium speed with an electric mixer 3 minutes or until fluffy. Add eggs, 1 at a time, beating well after each addition. Add pineapple and next 4 ingredients, beating until blended. Pour mixture into crust.
Bake at 325° for 1 hour and 15 minutes or until center is almost set. Cool on a wire rack. Spread Glaze over top of cheesecake. Cover and chill at least 8 hours. Garnish, if desired.
Yield

Amaretto Cheesecake
Ingredients
* 3 (8oz.) packages cream cheese
* 1 cup sugar
* 4 large eggs
* 1/3 cup amaretto
* 1-1/2 cups Graham Cracker crumbs
* 1 tsp cinnamon
* 1/4 cup sugar
* 8 oz. sour cream
* 1 tbsp sugar (plus 1 teaspoon)
* 1 tbsp amaretto
Directions
1. Mix graham cracker crumbs, cinnamon, sugar and butter. Pat mixture in bottom of a 9 inch spring form pan.
2. Beat cream cheese until light and fluffy. Gradually beat in 1 cup sugar. Add eggs one at a time beating well after each addition.
3. Pour into and bake in a pre-heated 375F oven for 45-50 minutes.
4. Mix the sour cream, sugar and amaretto. Spoon the mixture over the cheesecake when done and return to oven for 5 minutes at 500F. Let set for 48 hours in the refrigerator.
5. Top with 1/4 cup sliced toasted almonds, and chocolate curls before serving.

Regular cheesecake will never go away, it's just too good, Chocolate is ok if you have a craving for it, but if you don't the choice always goes to traditional, however, my husband make a BrandyAlexander Cheese cake that gives tradition a run for it's money!
