Old Fashioned Glazed Doughnuts

1 cup scalded milk
1/2 cup butter
1/2 cup sugar
1/2 teaspoon salt
2 eggs plus 1 egg yolk, beaten
2 envelopes active dry yeast
4 cups sifted flour
Cooking Oil

In a large mixing bowl, pour scalded milk over the butter, sugar and salt. Cool slightly. Add the eggs. When the temperature reaches between 105 to 115 degrees, add the yeast. Let mixture stand for 5 minutes.

Blend in flour a little at a time. Mix into a soft dough. When smooth, turn the dough out onto a well-floured board. Knead gently for about 2 minutes. Place the dough in a greased bowl, turning to coat all sides. Let rise for 1 hour.

Punch the dough down and divide in half. On a lightly floured board roll each section to 1/2-inch thickness. Cut with a floured doughnut cutter. Place on waxed paper. Set in a warm place. Let rise for 30 minutes.

In a deep skillet heat cooking oil to 375 degrees. Using a slotted spoon gently slip each doughnut into the oil. Fry for 2 minutes or until golden brown, turning once. Drain on paper towels.

In another mixing bowl, blend 1 cup confectioners' sugar, 3 tablespoons water and 1/2 teaspoon vanilla extract. Drizzle over warm doughnuts.

If you want to make cake dough nuts you will have to buy a dough nut maker. This is a simple tool that looks a little bit like a funnel with a large stopper in the small end. A good kitchen supply store should have one. The dough nut maker will have a recipe that will work. The glaze that dough nut shops use is nothing more than powered sugar and water.

Chocolate Glazed Doughnuts

4 Ounces unsweetened chocolate
1/4 Cup butter
2 eggs
1 1/2 Cups sugar
1/2 Teaspoon salt
4 Teaspoons baking powder
4 Cups flour
1 Cup milk
Cooking oil for frying doughnuts
2 Cups powdered sugar -- sifted
5 Tablespoons boiling water
1/4 Cup flaked coconut
1/4 Cup finely chopped toasted pecans -- or your favorite nut
4 Ounces white chocolate -- melted -- for drizzle (optional)

Melt 1 ounce chocolate with 1 tablespoon butter in top of double boiler over simmering water. Let cool.
Beat eggs and sugar until well blended. Add cooled chocolate mixture to egg mixture.
Sift together salt, baking powder and flour. Alternately add flour mixture and milk to egg mixture to form a dough. (You may not need to add all of the Milk. Just add enough to form a dough ball). Gather dough into a ball on a floured board. Roll out to 1/3 inch thick. Cut with a floured doughnut cutter.
Fry 3-4 minutes in oil heated to 375 degrees. Drain on paper towels.
Glaze: melt remaining 3 ounces chocolate with remaining 3 tablespoons butter in top of double boiler over simmering water. Stir in powdered sugar and enough boiling water to make a thin glaze. Dip cooked doughnuts into glaze. Place on wire rack.
Sprinkle with coconut and/or chopped nuts if desired. Drizzle white chocolate glaze over some for an elegant doughnut!

Glazed Yeast Doughnuts
INGREDIENTS
3/4 cup scalded milk
1/3 cup granulated sugar
1/4 teaspoon salt
1 (.25 ounce) envelope active dry yeast
1/4 cup warm water
4 cups sifted all-purpose flour
1 teaspoon freshly grated nutmeg (optional)
1/3 cup butter or margarine
2 eggs, beaten
oil for deep frying

2 cups confectioners' sugar
6 tablespoons milk
DIRECTIONS
In a medium bowl, stir together the scalded milk, sugar, and salt. Set aside to cool until tepid. If using nutmeg, stir it into the flour, and add 2 cups of the mixture to the milk, and beat until well blended.
In a small bowl, dissolve the yeast in warm water. Stir into the milk and flour mixture, then mix in the butter and eggs. Mix in the remaining flour 1/2 cup at a time. When dough is firm enough, turn it out onto a floured surface, and knead for 3 to 4 minutes. Place into an oiled bowl, cover and allow dough to rise until doubled in bulk. This should take 30 to 45 minutes.
On a lightly floured surface, roll the dough out to 1/2 inch in thickness. Cut into circles using a donut cutter, or round cutter. Set aside to rise for 30 to 40 minutes, or until light.
Heat one inch of oil in a deep heavy frying pan to 375 degrees F (190 degrees C). Fry donuts a few at a time. Cook on each side until golden brown, then remove to drain on paper towels. Glaze while warm, or just sprinkle with sugar.
To make the glaze, stir together the confectioners' sugar and 6 tablespoons milk until smooth. Dip warm donuts into glaze, and set aside to cool

Use:
1) powdered sugar (e.g., confectioners powered cane sugar)
2) little bit of water
3) few drops of lemon juice

Mix until the right consistency is reached. It must be liquidy in consistency and easy to spread.
Put on the doughnuts
Let dry

When it's ready, eat them with gusto!
