PEANUT BUTTER FROSTING:

1 1/2 sticks butter
2 c. brown sugar
4 tbsp. water
2 tbsp. vanilla (you must use 2 tablespoons vanilla)

Bring to boil for 1 or 2 minutes. Remove from heat and stir in 1 1/3 cups peanut butter until smooth. It will not be real thick but thickens on the cake as it cools.

This recipe uses boiling water instead of milk to thin the frosting if necessary. You will have to have some butter on hand though, but margarine will probably work pretty well also.

PEANUT BUTTER FROSTING
4 tbsp. soft butter
1/2 c. peanut butter
1 box powdered sugar
1/4 c. boiling water
Put sugar, peanut butter and butter in bowl, add a little less than 1/4 cup boiling water. Beat. If needed, add more boiling water a few drops at a time. Will frost a 2 layer cake.

Well, this calls for heavy cream, not milk, but if you have a can of evaporated milk in the pantry, you can sub some of that for the cream.

Peanut Butter Icing

1 cup confectioners' sugar
1 cup creamy peanut butter
5 Tbsp. unsalted butter, at room temp
3/4 tsp pure vanilla extract
¼ tsp kosher salt
1/3 cup heavy cream

Place the confectioners' sugar, peanut butter, butter, vanilla, and salt in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium-low speed until creamy, scraping down the bowl with a rubber spatula as you work. Add the cream and beat on high speed until the mixture is light and smooth.
