Balsamic vinegar is not alcoholic in any way. The only similarity is that it is also made from grapes. The grapes are cooked to kill any bacteria, if you understand fermentation you know that it is bacteria that makes grape juice alcohol.

Enjoy this wonderful ingredient, we like to make a dressing by reducing, or cooking out some of the liquid,

Vinegar contains no alcohol. Vinegar is made by first fermenting a fruit, berry or grain. In fermentation, yeast consumes the carbohydrates in the fruit, berry or grain. The waste product is alcohol. Then bacteria consumes the alcohol. The waste product is ascetic acid (vinegar). This is a simplified version of how vinegar is made. Balsamic vinegar is made by fermenting the "pressings" left over after grapes have been squeezed to get the juice out for making wine. The process for "aging" the fermented pressings is very complex and involves the addition of various flavorings plus letting the fermented pressing absorb flavor from barrels made from different kinds of wood. This process takes several years. The most famous balsamic vinegars are made in Modena, Italy. If you are curious about the process of making vinegar and balsamic vinegar your local library will have books about the subjects. Internet search engines will also point you to information on the subjects.

I would rest easy that using balsamic vinegar in salad dressing isn't going to make you drunk.
It's made from grapes and it is aged, but other than that the relationship between alcohol and balsamic vinegar is the same as alcohol and grapes. Or balsamic vinegar and rubbing alcohol. Or grapes and pickle juice.
If you're going to stop using balsamic vinegar becuase of the tenuous link to alcohol, that means you'll have to re-examine your use of pickles, since pickles are made from vinegar and all vinegars are made with some sort of fermentation somewhere in the process.

Balsamic vinegar is not the same as wine! Red wine vinegar is no longer wine! There are chemical reactiosn taht go on to change it from wine to alcohol. The vinegars contain no alcohol. Use them and relax.

The industry that makes vinigar can not wait for wine to turn to vinigar the fermenting process. It is quick and any alcohol is boiled out.
Balsamic does have a long brewing process but still no alcohol.
