One would have to have a tremendous amount of confidence in the integrity of the men who wrote it in order to accept their claims.
How can you have that much confidence in someone you have never met?

As for the comparison to scientists, scientists are willing to test their theories for empirical verification. Bible "prophets" demand that you accept their writing as the word of God, without having to require proof.
The difference between science and religion is quite obvious, you are much smarter than that.

They're not going to get it. They don't understand that the question is "Why do you believe it's the inspired word of some god?" They're too well indoctrinated to even grasp the question, never mind cogitate on it.
As for the question about trusting scientists, well, they're here, now. Their works are published, now. Their findings are peer reviewed, now. We can actually see them, hear them speak, now. We can question the results of their research, and ignore facts, and they won't threaten us with eternal damnation.

Well, even if the writers did have divine influence, what about the number of translators since? The bible stories have been reworked too many times by too many people, and when people cling to the wording of sentences, they must realize it is not the original sentence anymore. People will argue over the little words in sentences (is it 'if' or is it 'so'?).
The bible has been both transcribed and translated into hundreds of different languages. It's hard to have confidence in everyone all the way down the line.

Those who believe the bible believe it is God's word and spoken by God and just written down by man. I have no problem with this belief, I used to believe that myself.
Religion is a matter of faith.

The key is in your question:
The Bible was WRITTEN by men.
It speaks of God using men (prophets) as scribes to write out His Word. We can respect God's prophets because much of what they wrote about has already been fulfilled. (Test for prophets is at the end of Deuteronomy 18.)
Written by men; authored by God through the inspiration of the Holy Spirit.
The track record of the prophets alone is enough to convince.

My confidence is in the Holy Spirit that led men to write what He wanted said in the bible. The Holy Spirit is a part of the godhead and cannot lie.

It is easy to see that it is inspired writing...ever try to get even two people to agree on religious matters? Or, even two that can agree with all the religious teachings of all the writers of the O.T.?
Something this perfectly coherent and seamless, and not stilted in favor of man, shows itself to be inspired.
The human writers knew their writings were inspired by God. In some places, it seems to actually have been a dictation.
People tended to kill Christians during those years, I do not think any would have died willingly if they thought it was a lie. Only John was not martyred.

Ipresently can have confidence in what they wrote by examining things that have already happened and compare them with what was previously written. (2 Tim. 3:16-17; 'inspired by God, not by man).
