Generally things with a good mix of carbs, protein, and fiber without going crazy on calories or saturated fats.
During my weight training exercise common breakfast items included some of the following:
- Spoonful of peanut butter
- Dry whole wheat toast
- Fresh fruit, especially bananas
- Yogurts
- Cereal high in fiber
- Omelettes
- Oatmeal (without all the sugar or butter added)
- Chicken breasts
Really it's a no-brainer. If your only goal is to maintain simply focus on not eating things you know are bad for you (lots of butter, donuts, an abundance of greasy food, lots of sugar, etc). You can pretty much eat what you want as long as you're honest with yourself whether or not you're shoving down unhealthy stuff.

Whole grain cereals, 1 cup with 1/2 cup skim milk. The general rule to weight loss or maintaining weight is: 6 servings of grains per day, 2 1/2 cups veggies, 2 cups of fruit. 3 cups skim milk.3 days of a vegetarian diet, 3 days of tuna or some other type fish meals, 1 day with another type of meat, chicken ect. Some other suggestions are at least 30 mins. exercise per day to maintain weight loss, 1 hour to lose weight. (can be split up) Also you can get the spray fat free butter for your veggies, (tastes great ) My doctor says to eat breakfast then 2 hrs. later eat a fruit, then 2 hrs after eat lunch, then 2 hrs eat another fruit, and so on. Sounds like a lot of eating, but it is a balanced healthy diet and it does work well. I realize you only asked about breakfast, but I was on roll. LOL

You want to have some protein and carb to sustain you until lunch. Personally, I like vanilla yogurt with some fresh berries or dried cranberries, and some chopped toasted almonds. Whole wheat toast with some peanut butter would be good too. Try to eat whole fruit instead of juice if you're watching calories - more fiber too. Oatmeal is a good, hearty breakfast, especially if you top with a few tbsp of chopped pecans. Eggs are fine in moderation, as long as you either boil, poach or cook with non-stick spray. The quantity of food/calories really depends on your activity level. You can find guides on the internet.

An egg only has 3-4 grams of fat depending on size, and a lot of protein. I personally love a single serving packet of grits with some pepper and a dash of hot sauce and a yogurt. If I happen to have bagels in the house, then half a bagel with a little cream cheese.
