Darwin was right. The problem we have is that these changes usually take a good bit longer than a human lifetime, which means that unless records of some sort have been kept over a long period of time, we do not notice them.
Such records can be in the form of writing, art, fossils, and even DNA.
For example we now know from our own DNA that modern humans (homo sapiens) have only been around for about 200,0000 years and we are still changing slightly all the time.
Everything about us is changing also, but very slowly.

Actually millions of changes can be occurring without us knowing. It takes a long time before a gene becomes dominant in a species and that can be occurring now in creatures without us knowing because we see them as they are today. For instance, there are thousands of species of fungi in the jungles alone, many that scientists predict they haven't even discovered. These creatures are probably adapting without us even know it. You should watch Planet Earth sometime, its pretty interesting

That would be a lack of information.

A species of mice in the US has been documented as having begun the process of speciation. (Chicago, I believe.) And they did it in about 75 years.

Another species of mice has differentiated from its original species in the Italian Alps.

Mutations and variations occur all the time. I guess you just choose not to look for evidence.
