I don't want him to be a wizard but something else, like angel or giant. What readers would like to read about? Need advice!

The market is so saturated right now with wizards and vampires, it's impossible to find any good books. If you are going with a serious book, choose a heroic warrior or even some peon that do a good turn for a lord or lady and found himself in a whole new world. Or both--a peon with a sword did a good turn for the lady of the realm and her jealous husband sent him on some quest that turned him into a mighty warrior and now he's returned--what does he want? what does he intend? will he disrupt things or put them to rights?
Readers seem to like, at this moment, tales of one or a few people taking on larger numbers and prevailing. Or going down in a blaze of glory.
That's my advise, anyway. Good luck.

How about some sort of undead creature not like a skeleton but like someone whose soul is trapped in their dead body, or someone brought back by an evil wizard. That would be an interesting protagonist..

Toastycrumb sounds like a good start, then you can add grilled chicken, provelone, roasted peppers & balsamic vinegar -now that's a hero!
