First of all the entire nervous system is divided into two parts, the central nervous system (the brain and spinal cord) and the peripheral nervous system (everything else).
However, functionally, there are two major branches, the somatic nervous system and the autonomic nervous system.

Generally, the somatic nervous system is under our conscious control; the nerves in this system innervate skeletal muscle and is responsible for movement.

The autonomic nervous system is not under our conscious control. It is divided into two divisions: the sympathetic and the parasympathetic.

The sympathetic nervous system (for which the neurotransmitter at the target organ is nor-epinephrine, also known as nor-adrenaline) is responsible for the flight-or-fight syndrome. Stimulation of this division usually has global effects (throughout the whole body), and increases heart rate and strength of heart beat, increases rate of respiration, increases blood flow to the skeletal muscles, and other effects to make the body more ready to respond to emergencies.

The parasympathetic nervous system (for which the neurotransmitter at the target organ is acetylcholine) is responsible for what is called the "rest and relax" or the "rest and digest" syndrome. This division usually stimulates one target organ at a time. In general, it works in the opposite direction from the sympathetic, and would be characterized by decreased heart rate, reduced flow of blood to the muscles, and increased blood flow to the gut.

Some schemes propose a further division, known as the enteric system. It directly controls the gastrointestinal system.
