Actually, there are several reasons plants will wilt in the sun more than in the shade depending on exactly what the plant is and how long it has been planted in the location it is in.
Of course, some plants are full sun plants meaning they will thrive in full sun but they do still need ample water. Then you have the ones that are part-shade, part-sun and I would advise on these that if they're in the sun part of the day, it needs to be the early (am) part of the day that they're in the sun. The afternoon sun will be too much for them because they're not able to withstand a lot of sunlight. Also, if you've recently transplanted a seedling, it must acclimate to the location and even if it is a full sun plant, it needs to be shaded for the first day or two, which can mean planting late in the afternoon, early evening and being sure to water profusely until the plant adapts to its location. The sun is very hard on all plants if they don't have enough water but there are those plants that cannot withstand the full sun and that is just what it going to happen if they're exposed to full sunlight.....they will wilt. not necessarily most of the time when its shady theres a reason for it theres tree's large trees pulling water through there root systems and leaving Little for other plants make sure you use the right plants in the right area's but in the sun the heat evaporates the water faster then the root can pull in its not a constant pull of moister its takes time for the root to pull in and most of the time evaporation kicks in faster that's why its better to water early day after 6 am and before 10 am

Light = heat. heat causes the water in the plant to evaporate quicker.
