How about the Mammoth area? I was just in that area yesterday...beautiful weather, and noticed that many, but not all, campsites in the Coldwater Campground were reserved. You could call and ask about that campground or Lake Mary campground, or other campgrounds in the area http://www.mammothlakes.com/camping.html there are quite a few. Lots to do in Mammoth!!!! Hiking, drinking, boating, shopping, fishing, horse riding, rock climbing. Perhaps a few hours more driving than places you proposed but very nice.

I was in S. Lake Tahoe last week; very excellent weather; always lots to do there too.

Bothe Napa State Park may be full already but that's both great hiking and great wine tasting area...fun to bike around from winery to winery.
