How good is seitan? Much better to eat than to make yourself. I know the theory of kneading dough in water until only the wheat protein is left, then marinating it, but man, it's just so much work for such a tiny result. Best to leave it to the expert Chinese chefs who guard their flavouring secrets better than the crown jewels. Best faux-meat restaurants are all the all-you-can-eat ones in London, plus Veggie Hut in Melbourne. Travel there is worthwhile for the salty chicken -mmmm.
