I realize it has already been said, but learn to KNIT. It is meditative / calming. I learned to knit 4 years ago and now I work for a wholesale distributor. I receive emails from designers everyday about yarns they need and books that are being published. The business shows no signs of slowing down and the yarns that are being produced are gorgeous. Knitting / Crochet clubs are also a wealth of knowledge in the fiber arts community.

Sewing is a wonderful skill to have, you can find fabrics and patterns and make up things that you could never find in the stores. You can also make them fit! Wish I was better at sewing!
Jewelry making is great, can be as simple as stringing beads to making components with polymer clay or getting really serious and using the new precious metal clays that fire away the binder and leave real gold or silver pieces behind. I've been making jewelry for years and I even got to design my wedding ring! There are some gorgeous beeded purses you can make that take a long time, but they are stunning.
Gardening is terrific, I like to take out stress and frustration on weeds, lol. Gardening is good exercise, you can either raise flowers or vegetables or better yet... both together!
Stained glass is a more expensive hobby, but you can make some beautiful things from sun catchers and candle holders to actual windows.
Painting is good because you can do it on so many things. You can paint clothes, glass, wood, ceramics, paintings, all kinds of craft items. There is an inexpensive training program called One Stroke Painting that's available at craft stores that makes it pretty easy.
Knitting and crochet are also something that can produce useful items. I bought a knitting loom this last winter and made everyone hats. They turned out great and they are easy to make.

I've become addicted to quilting. You can make anything from purses to table toppers to wall hangings to lap quilts to full bed quilts. It all depends on how much time you want to put into it. If you already sew, it will be easy to start. A little fabric (100% cotton), some thread, and a book or two to teach you the basics. Take a class, if possible. Watch videos on QNNTV or HGTV's Simply Quilts.

KNIT! It really isn't just something for senile old biddies, it's fun! Quite addicting really. :) I usually knit rather crazy stuff that is like no one else's. You ought to try it. Many women and men are picking it up. Have fun!
