I know that after growing Legumes (Peas & Beans) you should grow Brassicas (Cabbage & Broccoli) so they absorb the nitrogen left by the legumous plants. What do you grow after growing brassicas then?

I've grown and harvested chinese brassicas (pak choi and choi sum) what should I now grow in that space?

What should I grow after spinach?

Brassicas are heavy feeders and prefer a neutral pH. They deplete the soil of the major nutrients so it is best to add organics and refertilize. This means legumes moves into the brassica's space and brassica moves to the umbellifer's (Carrot, parsnip, parsley, celery) space.
Another rule of thumb is alternating between deep-rooted and fibrous-rooted crops to improve soil structure.

Year one : legumes, onions, potato family, umbellifers, brassicas
Year two: onions, potato family, umbellifers, brassicas, legumes
Year three: potato family, umbellifers, brassicas, legumes, onions
Year four: umbellifers, brassicas, legumes, onions, potato family
Leafy greens like spinach are used to fill in openings as other crops are harvested or there is space.

possible the best crop to follow the brassicas would be potatoes as most of the brassicas should be cropped by the time you need to plant the potatoes. if you are growing late cropping brasicas such as purple sprouting or white sprouting then once they have finished cropping the space released could be used for corgettes marrows gourds ect. the other option would be the root crops but if you have manured the ground for the brassicas then this would not be advisable as the manure would cause the roots to fork and spoil them.
